Why Sève
The long versionof not a gel.

Sève started because we could not find a gel we actually wanted to take.
We train. We know what fuelling does for performance, for recovery, for having something left at the end of the day.
But we were tired of forcing down gels that tasted engineered and sat like a stone.
And the natural ones gave up too much. Not enough carbohydrate. Barely any electrolytes.
So we made the one we wanted.
A gel is built
for the shelf.
A gel is a suspension. Maltodextrin, a cheap fast carbohydrate, thickened with gums so the whole thing holds its shape in a jersey pocket for eighteen months without separating. That thickness serves the product, not you. It is the reason the label tells you to take it with water.
Maple syrup is already liquid, and it is stable on its own. Nothing has to be added to make it behave, which means nothing has to be swallowed that is not fuel. It goes down in one pull. There is no coating left behind, which is why the eighth one feels roughly like the first.
We call ours a gel because that is the aisle it sits in and the word people search. It was never accurate. It is a sève.
Pure is easy.
Pure that performs is not.
There is a category of natural fuel that stops at maple and salt and treats the ingredient list as the whole argument. It is a lovely idea. It is also incomplete, because what occurs naturally in syrup is nowhere near what an hour of hard sweating costs you.
Maple carries roughly 140mg of minerals per serving, mostly potassium. Useful, and not close to sufficient. We bring it to 322mg.
The form matters more than the number. Most fuels use chloride salts, which is the cheapest way to put sodium on a label. Chloride is harsh on the stomach lining and adds osmotic load at the exact moment your gut is under strain. Citrate is the better absorbed form, and it does not carry that penalty. It is more expensive, and it is the single reason we can put 322mg in a sachet without it turning on you at hour three.
Naturally occurring values reflect typical published figures for pure maple syrup. Check any individual product label for its own values.

Some fuels put 40g of carbohydrate into a single sachet and present it as an advantage. Fewer sachets, simpler maths. The trade is that your gut receives the entire hour in one moment.
Absorption does not work in bursts. It works at a rate. Handing your stomach 40g at once does not make it absorb faster, it just widens the gap between what arrived and what can be processed, and that gap is where the trouble starts on the back half of a race.
The whole hour arrives in a single moment. Simpler to carry, harder to process, and no way to take less on a day your stomach is unhappy.
More total carbohydrate, delivered in even steps. You can also drop to two on a bad day rather than being locked to one large dose.
The rule: any effort planned over 60 minutes, one gel every 20 to 30 minutes, starting from the gun.
Sucrose recruits
both pathways.
Your intestine moves glucose and fructose through two different transport routes. Load only one and it saturates, and everything behind it sits there waiting. Every modern high carbohydrate protocol is built on this: use both routes at once and you can absorb meaningfully more per hour.
Maple sugar is sucrose, which is glucose and fructose bonded together. It arrives already carrying both. The engineering that other brands do in a lab, maple does in a tree.
This is also why it tastes like something rather than nothing. Artificial sweeteners tend to turn on you deep into a long effort, and when a fuel becomes unpleasant athletes skip it, and a skipped gel is the beginning of a bad last hour.
Ours does
not travel.
Nearly every maple fuel on the market lists Canadian maple as a credential, then ships that syrup across an ocean to be blended somewhere else. It is a sourcing line on a label.
We are in Québec. The sap comes from one stand of trees, and we are close enough to go and stand in it. Sap runs for about six weeks each spring, and that window is the entire supply for the year. When a season's batch is finished it is finished until the next thaw. That is the honest reason we rarely discount, and it is not a marketing device.
Nights below freezing, days above. The pressure change is what moves sap up the trunk, so the season begins with a thaw rather than a date.
Peak run. The sap is roughly 2% sugar, so it takes about forty litres to make one.
Buds form and the sap turns. The season closes itself. Everything we will make for the year is now sitting in barrels.
